Hi
Am wanting to make a "IR BEAM BREAK SENSOR" as per attached schematic! .
Also I would like to add some sort of “Time Delay” to the schematic , so when the beam breaks, and the relay gets activated , would like the relay to stay activated for a couple of seconds after the object has passed through the beam !.
Anyone got any idea's has to how I can achieve that ? .

cheers
Spike

The 555 chip is definitely one of the most well used and versatile devices going.
I am not sure that your modification will be quite right for the use you mention, but just Google something like "555 monostable" and you should be able to get your circuit to give a desired delay. Experiment with the many circuit diagrams and you should be able to make a monostable do just what is needed.

BTW, this site has a lot of information on ICs - just keep looking!

Have a look in a good bookshop for experimental electronic circuit books - that might be a good Christmas present!
